     Rhode Island Johnny Cake

Ingredients
1 cup white corn meal
1/2 teaspoon salt
1 teaspoon sugar
 

Instructions
Bring 1 & 1/4 cups of water to a boil. Blend dry ingredients. Mix with water to a thick batter. Drop by tablespoons onto any type well greased fry pan or griddle. Medium hot - 380 degrees for electric fry pans. Do not touch or turn over for 6 minutes. At 6 minutes turn over and cook for about 5 minutes.
For optional thin crisp style, thin batter with 1/2 cup more water or milk.
Serving Suggestions
Serve with butter and maple syrup.
