1 medium green pepper, chopped

1 small onion, chopped

3 tbsp butter

4 cups fresh corn (about 9 ears of corn) or frozen corn

1/4 cup hot water
|

1 jar (2 oz) diced pimientos, drained
|
|
1 tbsp honey
|
|
1 tsp salt
|
|
Dash pepper
|

1/2 cup shredded cheddar cheese
|
|
4 bacon strips, cooked and crumbled
|

Instructions |

|
In a large skillet, saute green pepper and onion in butter until tender. Add corn, water, pimientos, honey, salt and pepper.
|
|
|
Bring to a boil. Reduce heat; simmer, uncovered for 8-10 minutes or until corn is tender. Sprinkle with cheese and bacon.
