1 pkg Brown's Best Soup Mix Beans (or mulitbean mix)
3 quarts of water
1/3 envelope of dry onion soup

1/4 tsp white pepper
1/2 tsp red pepper flakes
salt and pepper to taste
2 tbsp. chicken base )or 2 chicken boullon cubes
smoked sausage, sliced and browned

Instructions
Wash and sort beans. In a large heavy pot add beans, water, dry spices and chicken base. Bring to a boil and continue to boil for 2 minutes.
Remove from heat and let stand 1 hour.
After resting period, let simmer for 1 1/2 hours covered. When beans are almost done to your liking add the cooked sausage, cover and let simmer for 15 minutes or well warmed.
My husband hates tomatoes -and we both hate those little packages of seasoning that come with the beans--I was out of celery and celery salt -so I just started throwing things in the pot. And it turned out amazing.
Serving Suggestions
Caesar Salad and Crusty Bread --a nd a deep rich merlot or cabernet
