1 Tblsp. butter
|
|
4 rib pork chops, 1 inch thick
|
|
1 Cup finely minced onion
|
|
1 green pepper, seeded and cut into strips
|
|
1 Can (about one lb) tomatoes, drained and chopped
|
|
1 clove garlic, minced
|
|
1 bay leaf
|
|
1/4 tsp salt
|
|

Instructions |
|
|
Melt butter in large skillet over medium heat. Pat chops dry, season with salt and pepper, brown on both sides. Remove from pan.

Add onion and green pepper to skillet. Cook 5 minutes, stirring occasionally. Add tomatoes, garlic, bay leaf, and salt. Mix well.

|
Return chops to skillet. Cover. Cook over low heat about one hour. Turn once or twice during cooking.
|
|
|
Arrange chops on platter. Skim fat from sauce, remove bay leaf, pour sauce over chops.
