     Mushroom toped pork chops

Ingredients
1 c. chopped mushrooms
1 tbsp. butter
1/3 c. finely chopped red onion
2-3 tbsp. grated Cheddar cheese
1 tsp. salt
Dash of black pepper
 

Instructions
Heat butter in pan. Brown both sides of pork chops, place in oven-proof dish.
Prepare topping- Saute mushrooms in butter in a skillet until they are no longer moist. Cool. Mix mushrooms, parsley, red onion, salt and pepper. Place filling on top of pork chops. Bake at 350 degrees for 40 minutes. Sprinkle with cheese after 30 minutes of cooking time.
Check for doneness at side of pork chops, juice should run clear. Makes 4 servings
