     White Cheddar Asparagus Soup

Ingredients
1 1/2 c. onions, chopped
1/2 c. butter
4 c. chicken broth
4 cubes chicken bouillon
3 potatoes, peeled and chopped
1 cauliflower head, cut into flowerets
2 broccoli bunches, cut into flowerets
1/2 c. rice, uncooked
3 c. asparagus, chopped
 
4 c. milk (or part half and half)
salt and pepper to taste
Garnish- 1/2 lb. white Cheddar cheese, shredded

Instructions
Saute onion in butter until tender. Transfer to a large pot and blend in broth, bouillon, potatoes, carrots, cauliflower, broccoli, and rice. Simmer until rice is tender, about 15 to 20 minutes. Add asparagus to pot; continue to simmer over low until vegetables are crisp-tender. Season to taste. Garnish with cheese.
