     Pumpkin Puree

Ingredients
2 small cooking pumpkins
3-5 T olive oil
1 1/2 t cinnamon (optional)
1/2 t nutmeg (optional)
1/4 t pumpkin pie spice (optional)
 

Instructions
Wash and dry the pumpkins then cut the stalk off the pumpkin. Preheat the oven to 350 degrees. Then cut the pumpkin in half and scoop out the seeds and set them aside to roast for pumpkin seeds. cut the pumpkin into hunks.
place the pumpkin into a baking pan and baste with the olive oil. Cook until the pumpkin is tender. Once you are able to handle the pumpkin, skin it and then place it in a bowl to be mashed. Add the spices and cream to desired texture. Then the pumpkin will be ready for pie, bread, crumble, anything you want!
