     Pineapple French Toast

Ingredients
5 T. melted butter
1 c. brown sugar, packed
8 slices canned pineapple, well-drained
4 large eggs
1 c. milk
1/8 t. salt
1/2 t. cinnamon
1/2 t. vanilla
8 thick slices bread (Texas toast works well)
 

Instructions
Put butter in 9 X 13 inch cake pan. Mix brown sugar and cinnamon and sprinkle evenly over butter. Put pineapple slices on top.
Mix eggs, milk, salt, and vanilla and beat well. Dip each slice of bread into egg mixture and let soak a little, about 15-30 seconds per side.
Place bread evenly on top of pineapple; pour remainder of egg over bread.
Cover pan and refrigerate overnight. Bake at 400 for 25-30 min. until lightly brown on top.
