Follow directions to cook udon nooddles. Lightly steam snow peas and carrots. slice and press tofu between sheets of paper towels to remove moisture.

Place remaining ingredients in blender or food processor adding about half of the water. Blend together until smooth adding water as needed to create a medium thick consistency. Sauce thickens withrefridgeration, to thin stir in small amounts of warm water with a fork.

Taste and adjust seasonings. It may taste salty, but keep in mind that it will be served over bland foods. Use immediately or refridgerate for up to 1 week.

Notes-
2 large cloves of Roasted Garlic can be used to replace raw.
Tamari Soy sauce is better that regular.
Brown Rice vinegar is prefered.
Dask of cayenne paper is optional.
Mearsuring syrup in oiled spoon is helpful.
