     Sparkling Butter Toffee Cookies

Ingredients
1-1/2 sticks butter, softened
1 cup sugar
1 large egg
1 t vanilla
2 cups flour
1-1/2 t baking powder
1/4 t baking soda
1/2 cup almond toffee bits
sugar to taste
 

Instructions
Heat oven to 350 degrees F. Combine butter, sugar, egg & vanilla. Beat at medium speed, scaping bowl often, until creamy (1 to 2 minutes). Add flour, baking powder & baking soda. Reduce speed to low, and beat until well mixed (1 to 2 minutes). Stir in toffee bits by hand.
Shape dough into 1-inch balls. Roll in sugar. Place 2 inches apart onto ungreased cookie sheet. Flatten each with the bottom of a glass to 1-1/2 inch circle. If glass sticks, dip glass in sugar.
Bake 9 to 11 minutes, or until edges are slightly browned. Do not overbake. Sprinkle w/ sugar while warm. Cool completely.
