     Scottish Shortbread

Ingredients
1 lb. butter (or 1/2 butter and 1/2 margarine)
4 c. flour
1 c. powdered sugar
 

Instructions
Mix all ingredients and chill dough. Roll out to 1/3 inch thick and cut with cookie cutter. Place on greased cookie sheet. Bake at 325 for 20 minutes.
Or put dough in 9 X 9 inch pan and flatten with hand evenly over bottom of pan. Use a fork to make a pattern to put small holes in shortbread.
Bake at 325 for 30 min. for sheet. When baked, cut into squares or diamond shapes.
Shortbread should be very light in color, not browned.
