     BEAN AND TOMATO SALAD

Ingredients
1/3 pound tender green beans
1 pint cherry tomatoes cut in quarters
1/3 pound tender yellow wax beans
1/2 cup basil leaves
1/3 pound sugar snap peas
1/2 pound fresh spinach leaves
1 can dark red kidney beans, drained
freshly cracked black pepper
1 bunch scallions chopped
 
VINAIGRETTE
1 clove garlic minced
1/3 cup olive oil
1/3 cup olive oil
3 tsp dijon mustard
dash cayenne pepper

Instructions
Steam green beans, yellow beans, and sugar snap peas until tender, and immediately put in ice water too cool. Remove and place on towel to dry. Add kidney beans, scallions, cherry tomatoes, spinach leaves, and basil leaves. Mix the following vinaigrette and pour over the vegetables.
VINAIGRETTE Mix the olive oil, red wine vinegar, and mustard. Add the minced garlic and the fresh cracked pepper. Pour on veggies refrigerate for a couple hours before serving.
