     SPANISH RICE

Ingredients
2 cups rice (uncooked)
1/2 cup salad oil
3 cloves garlic, minced
5 stalks celery chopped
1 large onion chopped
1 green pepper chopped
1 red pepper chopped
28 oz can Hunts Crushed Tomatoes
12 ounces tomato paste
 
1 bay leaf
1 TBSP. salt
1/8 tsp. cayenne pepper
2 tsp. chili powder
5 cups hot water

Instructions
In large skillet heat salad oil. When hot add rice and cook till lightly browned. Add garlic, celery, onion, and green and red pepper and continue to cook, stirring frequently till these have browned lightly.
Add crushed tomatoes, tomato paste, bay leaf, cayenne pepper, chili powder, salt and hot water.(chili powder and cayenne pepper should be mixed with the hot water and make sure they are mixed well so there are no clumps.).
Stir everything together and mix well. Bring to a boil and reduce heat and let simmer for 20 minutes or until rice is done. Be sure to check to make sure it has enough water. If you dont use a lid it will take a little longer to cook and you definately need a little more water added to it as it cooks.
