     SPINACH AND BEAN SOUP

Ingredients
1 pound great northern beans (dried)
3 1/2 to 4 pound chicken
1 large onion chopped
2 stalks celery choped
salt and pepper to taste
1 pound fresh spinach
Sort and wash beans. Soak in 4 quarts of water for 24 hours.
 

Instructions
Sort and wash beans. Soak in 4 quarts of water for 24 hours.
Cook chicken in soup pan with onion, celery, and salt and pepper for 90 minutes. Remove chicken and let cool. While cooling strain the chicken broth and add the beans to it. Start cooking.
Remove chicken from bone and refrigerate for a while. Keep stirring beans occasionally so they wont stick.
After 2 hours add chicken back to pan. Keep testing beans to see when they are tender. When almost done add the spinach. Allow to cook for another 10 minutes. Serve with corn bread.
