     Crock-Pot- Turkey & Red Beans Stew

Ingredients
2 lb Smoked Turkey Legs
2 tsp Olive Oil
1 large red onion, finely chopped
3 garlic cloves, minced
2 cans (14.5 oz) no-salt-added red kidney beans
1 tsp cracked red or black peppercorn
3 cups reduced-sodium chicken broth
3 cups water
1 can (14.5 oz) no-salt-added stewed/diced tomatoes
 

Instructions
SCORE turkey legs using sharp knife and place in 4-quart or slow cooker
HEAT oil in skillet over medium heat. Saute onion 3 to 5 minutes, or until softened. Add garlic and saute 1 more minute
COOK on low 5 to 7 hours. Remove turkey legs from cooker and let cool slightly. Remove skin and shred meat from bones with two forks. Return to cooker and stir to combine. Serve over hot brown/wild rice if desired
