     Butter Pecan Shortbread

Servings   3 dozen cookies

Ingredients
2 cups flour
3/4 cup brown sugar
1 cup unsalted butter
1 tbsp vanilla
1 cup pecans, finely ground
 

Instructions
Measure flour and brown sugar into a bowl, stir together.In a large bowl with an elecric mixer, beat butter until creamy. Now, blend in the flour mixture, beating until smooth, then beat in the vanilla and finally the ground pecans. the dough should be firm enough to handle - if its too soft, refrigerate it for an hour or so before shaping and baking.
Take about 1 tsp of dough and roll it by hand ito a ball. Place on an ungreased cookie sheet and flatten. I find it easiest to keep the dough covered with a damp cloth and roll all the balls, placing them under the cloth as well. Then place and flatten. I find the dough gets too dry and crumbly if you roll and flatten a ball at a time.
Bake at 325 F for 10 to 15 minutes until slightly golden at the bottom. The tops should stay lightly coloured.
