     Manicotti or Stuffed Shells

Ingredients
18-21 pieces Manicotti or 1 box Shells, cooked & drained
16 oz. Low-fat Cottage Cheese
2 oz. Grated Parmesan Cheese
8 oz. Shredded Part-Skim Mozzarella Cheese
1 pkg frozen chopped spinach (or use 1lb fresh steamed lightly)
1/2 cup grated carrot
2 medium zuchini, grated
1 block extra firm tofu (slice and press in toweling to reduce moisture)
1 Tbsp. Parsley, chopped
 
1/2 tsp. Salt
1/4 tsp. White Pepper
4 cups Spaghetti or Marinara Sauce

Instructions
Cool pasta in a bowl of cool water then place on waxed paper until ready to stuff.
Combine all ingredients except sauce in a large mixing bowl and mix well. Spoon filling into manicotti or shells. Makes Apx 20 manicotti or 30 shells. If freezing you can store serving sized portions for 1-2 people in zippered sandwich bags.
To cook- Spread sauce thinly in the bottom of a 13x9” baking pan or appropriate size baking dish for smaller portions. Arrange filled manicotti/shells in a single layer in pan and cover with sauce. Cover with foil and bake at 375 for 35 minutes or until hot and bubbly.
