     Pecan-Roasted Asparagus

Category   Salads - Soups - Sidedishes
Sub Category   None
Servings   4

Ingredients
1 lb asparagus, trimmed
2 Tbl pecan chips
cooking spray
1 Tbl sugar
1 Tbl balsamic vinegar
1/4 tsp salt

Instructions
Preheat over to 425 degrees. Be sure the asparagus is completely dry. Arrange the asparagus in a single layer on a baking sheet. Sprinkle with the pecans. Lightly spray with cooking spray.
Bake for 10 min or until the asparagus is tender-crisp and the pecans are browned. Meanwhile, in a small bowl, stir together the suger, vinegar and salt.
Remove the asparagus from the oven. Pour the sugar mixture over the asparagus. Stir gently.
Cook's tip- Be sure to use pecan chips rather than chopped pecans for this recipe. The chips are much smaller and, when roasted, distribute their nutty flavor more evenly over the asparagus. If chips are not available, chop the pecans into very small pieces.
