Mix yeast and warm water till combined. Add in 2 cups flour, remaining dry ingredients and oil, mix well. Stir with wooden spoon or in stand mixer. Do not use metal bowl or spoon. Once blended, add remaining flour, 1/2 cup at a time. First use flat beater, then dough hook (or spoon, then hands). Knead for 8 minutes. Cover tightly in greased bowl with plastic wrap, let rise at room temp. till double, aprx. 1 hour.
Punch dough down, re-cover and let rise a second time, at room temp. till double, aprx. 45 min.
Punch dough down, knead briefly to work out bubbles, shape into two loaves, place in greased loaf pans and cover with wax paper, and leave at room temp. till dough has risen about 1 inch above the edge of the pans, aprx. 40 minutes.
Preheat oven to 400 degrees for at least 20 minutes before baking. Place loaves in hot oven for 10 minutes. Reduce heat to 350 degrees and bake for additional 30 minutes until the loaves are golden brown. Remove from oven, turn out from the pans immediately and leave on metal rack to cool.
