     Baked Salmon w/ Pepper Chili Sauce

Ingredients
3 to 4 lb salmon filet ( boned)
1/4 cup chili sauce ('Homemade' brand)
1/2 cup chopped green pepper
2 -3 sliced scallions incl. green stem
juice from 1/2 a lemon
3/4 cup mayonnaise
chopped fresh herbs-
basil, parsley - apprx. 1 tbsp each
extra virgin olive oil
 
salt, pepper

Instructions
Sauce- Prepare sauce at least 2 hours in advance so the flavors blend. Combine mayo, chili sauce, chopped pepper, scallions, lemon juice, salt and pepper, and chopped herbs together in a bowl. Mix well. Chill 2 hours or more.
Fish preparation- Oil the skin side of the salmon. Place on a broiling pan skin side down and cover the flesh side completely with the sauce.
Broil fish sauce side up until sauce begins to brown (approx. 10 min.). Pour a 1/4 inch boiling water in bottom of broiling pan. Lower heat to 425 and bake on center rack approx. 10 more minutes.
Note- the addition of water in the bottom of the broiler pan helps keep the fish moist.
Serving Suggestions
Great with a green beans with sea salt and lemon.
