24 oz Old Elpaso Mild Salsa (any other brand will completely change the flavor)
2 cans black beans (rinsed and drained)
2 cans pinto beans (rinsed and drained)
3 cans corn (drained)
2 large zucchini (chopped)
cilantro (topping)
scallions (topping)
shredded cheese (topping)
Instructions
Boil chicken in broth until cooked through (about 20 mins if meat was frozen, or 15 mins if not). Pull out of broth and pull apart with two forks while pieces are still warm.
Add all ingredients (except toppings) to broth and simmer for a couple of hours (the longer the better).
Put into bowls, sprinkles on toppings and serve.
