Ingredients
2 1/2 - 3 cups eggs, beaten (or egg substitute)
1/4 to 1/2 cup diced onion
1-2 small cans mushrooms
Cooked vegetables such as potatoes, zuchinni, asparagus, broccoli or green beans
Raw vegetables such as spinach or tomatoes
Any cooked meat you prefer such as, ham, bacon or sausage.
1-2 tablespoons butter or margarine
1/2 cup cheese of your choice
 
Salt and pepper

Instructions
Saute vegetables (onions, mushrooms, asparagus etc..) in 1-2 tablespoon butter or margarine. The size of your frittata will depend on the amount of vegetables you incorporate.
Use no-stick spray to coat a pie pan or tart dish. Pour in eggs and add seasonings.
Mix in vegetables, meats and top with cheese.
Bake 25-30 minutes in 350 oven until knife inserted in center comes out clean.
Serving Suggestions
A very versatile breakfast. Use leftover veggies and skip the saute. Serve with fresh fruit and toasted croissants for an elegant brunch.
