     Cream Pie Filling (Banana or Coconut)

Servings   enough for 2-3 pies

Ingredients
2 qts. half and half OR 1 qt. milk and 1 qt. cream
3 c. sugar
1 3/4 c. flour
6 eggs
1/4 t. salt
2-5 t. vanilla (depending on your taste)
1/4 c. butter
 

Instructions
In heavy pan, heat 1 1/2 qts. half and half.
In large bowl, combine eggs, sugar, flour, salt and other 1/2 qt. half and half and beat until smooth.
Add mixture into heated milk, stirring constantly with wire whisk until it boils (MED heat).
When boils, remove from stove and add butter, vanilla and tinge of lemon juice. Cool in fridge (this may take hours). Add coconut or bananas and place in pie shells. Top with cream if desired.
Serving Suggestions
Makes enough cream for 2-3 pies
