3 c. shredded hash browns (I use the refrigerated kind. If you use frozen, make sure to thaw and pat
1/2 stick butter, melted
3 large eggs
1 c. half & half
3/4 c. ham, chopped or cubed
1/2 c. other vegetable components like mushrooms, onion, peppers, etc
1 c. shredded cheddar cheese or Swiss cheese or other cheese of your choice
salt and pepper to taste
Instructions
Preheat oven to 450. In a pie plate, toss potatoes with the melted butter, salt and pepper. Press into the bottom and up the sides to form a crust. Bake 20-25 minutes until golden brown and starting to crisp.
In a bowl, combine rest of ingredients. Season with salt and pepper to taste. Pour this egg mixture over crust.
Decrease oven temp to 350. Bake for approximately 30 minutes or until light golden brown on top, and puffed.
Let sit for a few minutes prior to cutting.
