1 Large pork tenderloin (size depends on number of people to be served)
4 garlic cloves, minced
Coarse salt and ground pepper
1 tablespoon olive oil
1 cup fresh orange juice
12-15 flour or corn tortillas (blistered or warmed)
Fresh cilantro leaves, thinly sliced onion, diced avocado, and lime wedges, for serving
Instructions
Place pork, garlic, seasonings and oil in large roasting pan.
Pour orange juice over mixture and add 2 cups water.
Cover and cook at 350 degrees for 1-2 hours (depending on size) Meat should separate easily
when done.
Remove covering, use forks to separate meat into strands and bake again for 20-30 minutes until meat on top begins to crisp and all juices are absorbed.

Suggestions
Load carnitas into tortillas and add cilantro, a lime wedge, diced avocado and onions. Easy crowd pleaser!!!
