     Arroz Con Pollo

Ingredients
4 boneless, skinless chicken breasts or 6 thighs
2 cups long-grained white rice
2 garlic cloves, minced
1/2 medium onion, chopped
1 can canned crushed tomatoes ( or tomato sauce)
2 1/2 cups chicken broth
1/2 teaspoon salt and pepper to taste
1/4 cup chopped parsley or cilantro
 
3 tbl chili powder
2 tsp paprika
1/2 tsp cumin
1/3 cup prepared salsa ( more if you use tomato sauce above)

Instructions
Combine all ingredients except chicken and rice in a bowl.
Sprinkle rice over bottom of a large baking dish. Place chicken on top of rice and pour tomato and broth mixture over the top, covering chicken and slightly lifting each piece in order for liquid to reach rice underneath.
Cover and bake in 350 degree oven for 1 hour. (uncover for the last 20 minutes if drier rice is desired)
Top with extra salsa or jalapenos for a spicier meal.
Serving Suggestions
Serve with pinto beans ( see recipe) and a green salad for an easy meal. Don't forget the flour tortillas!
