Pour 1-2 tbl olive oil in skillet.
Place tilapia fillets in skillet (or griddle) on high heat. Sprinkle blackening seasonings over topside and turn immediately.
Season partially cooked side.
Cook about 3 minutes per side. Fish should be moist but flaky.
