     Honey Mustard Salmon

Category   Entrees - Maindishes
Sub Category   None
Servings   2-4
Preptime   30 min

Ingredients
1 lb. salmon fillet (or 4 individual fillets)
1/2 cup mustard
2-3 tbl. honey
1-2 tbl. brown sugar

Instructions
Prepare salmon fillet by rinsing and making sure all scales are removed.
Mix together mustard, honey and brown sugar in a small bowl.
Place salmon fillet in skillet or on griddle and coat topside with honey mustard sauce. Turn salmon and coat bottom side with sauce as well.Cook 3-4 minutes each side. Glaze will brown and caramalize so look for fish to remain moist, but flake easily with a fork.
If you want to use remaining glaze, take care not to contaminate bowl with utensil used to spread glaze on raw fish.(Use one spoon to dip, another to spread the glaze on fish) You may cook leftover glaze in microwave for 1 1/2 minutes to sanitize. Use remaining glaze to top salmon when serving
Serving Suggestions
Serve with fresh steamed asparagus and Garlic and Olive oil noodle (packaged, cooked to directions)
