boneless skinless chicken breast (1 for each person)
1 large bell pepper
1 large onion
1 clove garlic minced
1 can diced tomatoes
1 can sliced mushrooms (or fresh if available)
salt, pepper, oregano, and basil to taste
dash of crushed red pepper (optional)
pasta or rice (optional)
1 T. olive oil
Instructions
Slice chicken breast into strips and saute in olive oil until juices run clear. Remove chicken from pan.
Add onion, bell pepper, and garlic. Saute until just tender. Return chicken to the pan and add tomatoes (with juice) and mushrooms. Add seasoning. Simmer mixture about 10 to 15 minutes.

Suggestions
Serve hot over rice or pasta.
