     Grandma Alice’s Rhubarb Crunch

Ingredients
1-1/2 cups flour
1 teaspoon cinnamon
1-1/2 cups quick oatmeal (regular will work, too)
1 cup brown sugar
1/2 cup melted butter (1 stick)
4 cups cut-up raw rhubarb (or more)
1 cup water
1-1/2 cups sugar
2 tablespoons cornstarch
 
1 teaspoon vanilla

Instructions
Do not grease pan. Heat oven to 350 degrees. Mix flour, oatmeal, brown sugar and melted butter. Press 3/4 of it into a 9” x 13” pan (glass is best). Cover with cut-up rhubarb.
In saucepan, mix water, sugar, cornstarch and vanilla. Cook until thick and pour over rhubarb. Sprinkle rest of oatmeal mixture on top.
Bake at 350 degrees for 45-60 minutes. If using glass pan, reduce heat to 325 degrees for baking.
June’s note- I sometimes cut this recipe in half and bake in an 8”x8” pan. Bake a bit over 30 minutes…I also add a little more flour and oatmeal.
