Put oil in a pot over medium heat. Add onion and garlic; cook for 5 minutes.
Mix in flour and tomato paste and cook for a couple more minutes. Slowly, stirring constantly, pour in the stock.
Mix in diced tomatoes and sugar and simmer for 10 to 15 minutes. Puree the mixture in food processor or blender until smooth. Put back in pot and simmer, season with salt and pepper, and stir in oregano.
Once scooped into bowls, put feta cheese and crushed tortilla chips on top.
