Parsley flakes, (fresh is best, but dried will work)
1 Fresh Lime
1/2 cup olive oil
1/4 Cup Cooking Sherry
1/2 tsp dried dill weed
1/8 cup lime juice
1/2 tsp ground cloves
salt
pepper
Instructions
Prepare a sauce of the olive oil, sherry, dill weed, lime juice and clove. Mix well, and brush over the salmon fillet. sear salmon on both sides then Place on a cookie sheet. Broil until lightly browned and tender. Do not overcook. This will take very little time, so be careful.
Choose a large baking pan into which you can fit the fillet and still have room for a little liquid all around the fish. Salt and pepper fish. sprinkle with green pepper, red pepper and sliced red onion, and parsley. Place in the pan, Sprinkle with dill. Cover pan with aluminum foil and bake in a 325° oven for about 30 minutes.
