     Zucchini Apple Crisp

Ingredients
1 large zucchini
3/4 cup lemon juice
1 tsp nutmeg
1/2 tsp sugar
2 tsp cinnamon
1 1/3 cup packed brown sugar
1 cup flour
1 cup rolled oats
2/3 cup butter, softened
 

Instructions
Peel the zucchini and remove seeds. Slice to look like apple slices (about 8 cups).
Place in pot and cook with lemon juice over medium heat until tender (about 15 minutes). Add sugar and spices, stirring until sugar dissolves. Pour into a 9X13 inch pan.
Mix the brown sugar, oats, flour, and butter until crumbly. Sprinkle topping over zucchini.
Bake at 375F for 45 to 50 minutes.
Serving Suggestions
Serve warm with ice cream or shipped cream.
