Ingredients
2 cloves garlic, lightly crushed and chopped
1 onion chopped
1 large carrot, chopped
large handful of cauliflorets, halved if large
1 pepper chopped
half a small cabbage or 1 baby spring
1 tin chopped tomatoes
1 tbsp south african curry powder
peri peri spice/chillies to taste
 
1 tin butter beans or similar (not kidney)
little water to thin, if needed

Instructions
Heat oil and sauté onions, garlic, green pepper with the chillies and curry powder for five minutes.
Add the carrots and cauliflower and cabbage, stir well till coated with spice mix. Add beans and seasoning, tomatoes and simmer till heated thru.
Cook gently for about 20-25 minutes, or until all vegetables are cooked.
Serving Suggestions
Serve hot or cold as side dish to grilled meats, with crusty bread or yellow rice.
