2 cloves garlic, lightly crushed and chopped
|

1 onion chopped
|

1 large carrot, chopped
|
|
large handful of cauliflorets, halved if large
|

1 pepper chopped
|
|
half a small cabbage or 1 baby spring
|
|
1 tin chopped tomatoes
|
|
1 tbsp south african curry powder
|
|
peri peri spice/chillies to taste
|
|

1 tin butter beans or similar (not kidney)
|
|
little water to thin, if needed
|

Instructions |
|
|
Heat oil and sauté onions, garlic, green pepper with the chillies and curry powder for five minutes.
|
|

Add the carrots and cauliflower and cabbage, stir well till coated with spice mix.
Add beans and seasoning, tomatoes and simmer till heated thru.
|
|
|
Cook gently for about 20-25 minutes, or until all vegetables are cooked.

Suggestions |
|
Serve hot or cold as side dish to grilled meats, with crusty bread or yellow rice.
