     Pinto Beans & Smoked Sausage

Ingredients
1 12oz bag of dry pinto beans (Soaked Overnight)
3 - 4 package of smoked turkey tails
2 cubed chicken boullion cubes
1 package smoked sausage
Season Salt
Pepper
Mrs. Dash
1 or 2 cups of rice (optional)
 

Instructions
Rinse turkey tails and add to a pot of water. fill water level of the pot to 3/4 full. Add season salt pepper and 2 chicken bullion cubes. Bring to a boil. Cover and lower heat to a hard simmer for about 1 1/2 to 2 hours
Once the turkey tails are tender add beans and Turn heat on stove up to a very light boil add beans and sliced/cut spoked sausage and cover. Stirring about every 15 - 20 min. Be carful becuase the closer the beans get to being done, the easier it is for them to scorch at the bottom
Cook bean for about 35 - 45 mins (or until good nd tender) sometimes it takes a little longer depending on how fresh the beans are.
Serve with cornbread and rice
