     Oven- Baked Omelet

Ingredients
6 eggs
1/2 cup low fat cottage cheese
1/2 cup low fat sour cream
1/2 cup salsa of choice
1-1/2 cups shredded low fat Monterey Jack or Cheddar chesse (or combination)
salt and pepper
 

Instructions
Preheat oven to 350 degrees F. Spray a 9-inch pie pan with non-stick cooking spray. Whip together eggs, cottage cheese and sour cream in a bowl; season with salt and pepper. Spread salsa over bottom of pie pan and sprinkle cheese over that. Pour egg mixture over cheese. Bake for 45 mins.
Serving Suggestions
Serve with a salad and bread to make an easy supper for 4-6 people.
