     Peach-Ginger Crisp

Ingredients
6 cups sliced peaches
2 Tbs honey
1 1/2 Tbs minced candied ginger
2 Tbs cornstarch
1 cup unbleached flour
1/4 cup rolled oats
1/3 cup packed light brown sugar
4 Tbs light margarine, cubed and chilled
3 Tbs chopped pecans, toasted
 
frozen fat-free vanilla yogurt

Instructions
Preheat oven to 350 degrees. In a large bowl, toss peaches and honey. Sprinkle with ginger and cornstarch. Set aside. In a medium bowl, combine flour, oats and brown sugar. Using a pastry blender or fork, cut in margarine. Add pecans and toss lightly with 2 forks to combine.
Spoon peaches into a 2-quart baking dish. Sprinkle oat mixture on top. Bake until golden and hot, about 45 mins.
Allow to cool for 30 mins before serving. Top with a dollop of yogurt.
Serving Suggestions
Tip- Fresh peaches will keep their bright color longer if you toss them with lemon juice after slicing.
