8-10 Sliced Potatoes (1/4 inch, cleaned, but not peeled)
1/2 Cup Butter
1/2 Cup Flour
1/2 tsp Salt
1/4 tsp White Pepper
2 Cups Milk
1 Cup Chopped Onion
2 Cups Grated Cheddar Cheese
1 Cup Diced Ham
1/2 Cup Sour Cream
Parsley
Instructions
Make White Sauce- Melt Butter over low heat. Remove from Heat. Add Flour and Stir till smooth.
Add Milk gradually, Mixing till smooth between additions. Cook while stirring over medium heat until thickens. Remove from heat. Add Onions, Salt, Pepper & Sour Cream.
PreHeat Oven to 350 degrees.
In Large, greased Casserole Dish, Layer 1/2 Cup White Sauce Mixture, 1/3 of Potatoes, 1/3 of Ham, 1/4 of Cheese, Sprinkle with Parsley Flakes. Repeat twice, ending with White Sauce Mixture.
Bake uncovered 40 to 50 min. or till potatoes in center are easily pierced with fork.
(May cover last 15 minutes if not done, but browning on top.)
Sprinkle with remaining Cheese.
You can make this without the salt and use unsalted butter, for those who are watching their sodium intake. Use Mrs. Dash for flavor
