11/2 lb. sirloin steak, trimmed and cut into 1/2 inch chunks
2 tbsp olive oil
3 cloves garlic, chopped
1/2 cup chopped parsley, divided
2 tbsp vegetable oil
6 new potatoes, sliced into 1/2 inch thick strips
4 Roma tomatoes, seeded and cut into 1-inch pieces
1 red bell pepper, seeded and thinly sliced
2 medium red onions, thinly sliced
1 clove garlic, chopped
1 bay leaf
1 tsp. chopped fresh thyme or 1/2 tsp. dried thyme
2 tsp. soy sauce
2 tsp. white wine vinegar
1/2 cup fresh or frozen green peas
Instructions
In medium bowl combine steak with olive oil, 3 cloves garlic and 1/4 cup of the parsley. Toss to coat; marinate 30 minutes.
Heat vegetable oil in large skillet over medium heat. Add potatoes and cook 5 to 8 minutes, stirring occasionally, until golden brown. Transfer to plate lined with paper towels. Set aside. cook steak in same skillet 5 to 6 minutes, stirring occasionally, just until browned.
Add tomatoes, bell pepper, onions, 1 clove garlic, bay leaf, thyme, soy sauce, vinegar and salt and pepper to taste. cook 2 to 3 minutes. stirring constantly.
Add potatoes, peas and remaining 1/4 cup parsley; cook until hot.
