Cut chicken into strips, Coat flameproof casserole dish with cooking oil spray and cook chicken, in batches until browned all over. Cook onion, garlic and spices in same dish stirring, until onion is soft.
Return chicken to dish with stock and water, bring to boil. Bake covered in moderate oven for 1 hour. Uncover, bake about 45 minutes or until chicken is very tender and mixture has thickened slightly.
Stir in dates, honey and uts and sprinkle with fresh coriander.
