Grandma's Marrow Ball & Vegetable Beef Soup

Category   Salads - Soups - Sidedishes
Sub Category   None

Ingredients
1 pound stew meat
2 tbsp. flour
4 celery stalks chopped
1 medium onion chopped
4-6 cups beef bouillon from cubes
1 package frozen mixed vegetables
3-4 eggs
2-3 sleeves of saltine crackers
1-2 Tbsp. butter

3-5 soup bones with marrow
cooking oil

Instructions
Roll stew meat in flour and brown in cooking oil. Add beef bouillon to the browned meat. Add chopped celery and onion. Simmer for one hour until meat is cooked. Added frozen vegetable.
In a small fry pan melt butter, add the soup bones. Brown on both sides until the marrow comes out. Remove the bones and continue to brown the marrow being careful not to burn the butter. Crush saltine crackers, add the marrow to the crushed crackers and stir together. Beat 3 eggs, add to cracker mixture until this becomes ready to form balls. You may need to add another egg.
Form teaspoon size marrow balls, the more the better! Bring soup to a boil. Carefully add the balls to the soup, cover and continue to boil for 10 minutes. The balls should have puffed up. Do NOT open the lid for 10 minutes then remove from heat and serve.
