     Fresh herb Penne with Chicken and Tomatoes

Ingredients
16 oz. (1 pkg) Penne Rigate
4 tsp extra virgin olive oil
1 tsp fesh chopped garlic
1 can (14.5 oz) diced tomatoes
1/3 cup fresh basil leaves, Chopped or cut into thin strips
1 pkg (10 -12 oz) cooked chicken breast strips
1-1/2 cup (6 oz) shredded Mozarella cheese
salt and cracked pepper to taste
 

Instructions
Cook and drain Penne Rigate according to package directions
Heat olive oil in large skillet over medium-high heat
Add garlic and cook for 1 min. Add tomatoes and basil; cook for 2 mins. Add chicken; simmer for 5 mins.
Toss with pasta and Mozzarella cheese. Season to taste with salt and cracked black pepper. Serve immediately.
Serving Suggestions
May substitute dry equivalents- 1/8 tsp garlic powder, 1-1/2 tsp dry basil
