     Spaghetti with Peppers, Eggplant, and Tomato

Ingredients
14 oz. spaghetti
1/3 eggplant
1 small red pepper
1 small yellow pepper
1/2 zucchini
4 medium tomatoes
12 olives
2 tbsp capers
8 basil leaves
 
2 cloves garlic
2 anchovy filets (optional)
4 tbsp olive oil
salt
pepper
parmesan cheese

Instructions
Cut all of the vegetables. For the tomatoes peel then cut. Only crush the garlic. Heat the olive oil and saute the garlic. Saute the vegetables until golden brown. Add the anchovy. Add the tomato. Add the capers and olives. Boil and drain the spaghetti. Add the spaghetti to the vegetables and toss.
