     Charles Turkey Stuffing

Ingredients
1 lb pork sausage - fried
1 small package carrots - diced
1 large onion - diced
1 bunch celery - diced
1 large leek - white part only, diced
1 lb crumbled bread crumbs
3 cups chicken stock
1 stick of butter
1/4 cup dry sherry
 
2 eggs
fresh ground pepper

Instructions
Melt butter in large saute pan, then add carrots, onion, celery and leeks and cook until tender (about 10 minutes).
Add chicken stock to vegetables to heat through.
Put bread crumbs in LARGE mixing bowl and then pour the vegetable mixture over and combine. Add about 1 - 2 tablespoons pepper.
Either use to stuff the turkey or put the mixture into a large, greased casserole dish or 9 x 11 pan. Bake at 375 for 30 - 45 minutes or until browned to liking
