     Minestrone Soup with Pesto Tortellini

Ingredients
1 onion
2 potatoes, peeled and chopped
4 celery stalks, chopped
1 cup carrots, chopped
1 can cannellini beans, drained and rinsed
4 cups low-sodium chicken broth
tomato paste, to taste
salt and pepper, to taste
rosemary, to taste
 
thyme, to taste
basil, to taste
oregano, to taste
pinch of cayenne pepper
1/2 cup frozen corn
1/2 cup frozen peas
1 cup pesto tortellini

Instructions
Add all ingredients except corn, peas and tortellini into slow-cooker. Put slow cooker on low and let sit 6-8 hours.
Turn cooker on high and add peas, corn and tortellini. Let cook about 10 minutes, until tortellini is cooked through. Serve and enjoy!
