     Corn Salad

Ingredients
5 ears corn
1 red bell pepper
1 Cubanelle pepper or green bell pepper
½ red onion
¼ cup cilantro
½ c white vinegar
1 packet Splenda (or 2 tsp sugar)
 

Instructions
Start by husking and cooking the ears of corn. (This can be done by boiling for 6-7 minutes, or by cooking in the microwave.) Let the cooked ears cool until they are easily handled, and use a sharp knife to cut the kernels from the cob. Dice the peppers, onion, and cilantro. Mix all ingredients in a serving bowl, and enjoy!
