Beat eggs on high speed for 5 minutes; gradually beat in sugar. Stir in pumpkin and lemon juice.
Mix dry ingredients and stir into pumpkin mixture. Grease and flour cookie pan and spread batter thinly. Top with nuts and bake in 375 oven for 15 minutes.
Turn out on towel covered with powdered sugar. Roll cake and towel up and let cool.
Beat together powdered sugar, cream cheese, butter, and vanilla. Unroll cake and remove towel. Cover cake with filling, roll up, and chill again. To serve, cut into 1 inch slices.
