Scrub potatoes, pierce several times with a fork. Wrap each in a paper towel and microwave on high 12 - 14 minutes. Let cool to the touch.
Slice away skin from the top of each potato, carefully scoop out pulp. leaving shells intact. Mash pulp.
Combine margarine & cream cheese in a medium bowl. Microwave on high 30 to 40 seconds, or until softened. Add potato pulp, chives, milk, salt & pepper, mixing well.
Stuff potato shells with potato mixture. Place them on a paper towel and microwave on high for 3 minutes or until thoroughly heated.
Try chive flavored cream cheese or experiment with other flavors, you can substitute green onions for chives.
