Preheat oven to 325 degrees. In large mixer bowl, beat egg yolks with sweetened condensed milk, lime juice, and food coloring if desired. Pour into prepared crust. Bake 40 minutes. Cool, then chill. Top with whipped cream.
If using 6 ounce graham cracker crust, use 1 can sweetened condensed milk, 3 egg yolks, and 1/2 c. lime juice. Bake 30 minutes. Proceed as above.
