     Sweet & Sour Pork Chops

Ingredients
4 boneless pork chops
2 T. peanut oil
2 T. cornstarch
1/2 tsp. salt
1/4 c. brown sugar
1/4 c. cider vinegar
1 c. pineapple juice
1 T. soy sauce
1 medium onion, sliced
 
1 large green pepper, diced

Instructions
Preheat oven to 350 degrees. Brown pork chops in oil. Place in baking dish.
Combine remaining ingredients except onion and green pepper in saucepan and bring to a boil. Cook for 2 minutes. Pour sauce over pork chops. Top with onion slices and green pepper.
Cover and bake 1 1/2 to 2 hours until chops are tender. Serve with rice.
